Mushrooms A La Popeye

Mushrooms A La Popeye

1 tsp Butter 1/4 cup flavored bread crumbs
4 tblsp Pimiento 1 package frozen chopped spinach
1/2 tsp Pepper 1 package button mushrooms
2 tblsp Parmesan cheese 1/4 cup finely chopped onion

(measurements are estimated)

Heat oven to 350∞ and prep baking sheet with non stick spray.
Remove mushroom stems, trim off the hard ends and throw away. Chop the remaining stems and set aside. Melt the butter in your pan and cook the onions for 2 minutes. Add the chopped stems and cook 2 more minutes. Begin adding drained spinach, bread crumbs pimiento, pepper, and parmesan.
Cook till ingredients are completely mixed. Stuff the mushrooms with mixture and sprinkle parmesan on top. Bake for 15 minutes.
